Kiwami, The Extreme in Japanese, is our flagship NEIPA brewed as an homage to pushing the limits. We embrace the profound meaning in the endless pursuit of mastering one’s passion and elevating it to new heights. Miyamoto Musashi (1584-1645), widely known as Japan’s greatest swordsman of all time, became renowned for his double-blade technique and perfect record in 61 duels. Also a philosopher and strategist, his total commitment to all aspects of mastery epitomizes Kiwami. Of his famous quotes, perhaps none more timely: 身を浅く思い、世を深く思う。Consider yourself lightly, consider the world deeply.
Kiwami pours a beautiful, opaque gold. A heaping dose of Pacific Northwest and featured hops through the kettle hop and dry hop confers a juicy mango nose with a strong resiny finish, intensifying as it warms in the glass. In the spirit of the original Vermont NEIPAs, we seek to impart a prominent, yet balanced dank character and bitterness. A fusion of the NEIPA origin and contemporary beer style definition. Taste profile: Mango Weed.
Motueka dry hop
New England Double IPA (8.7% ABV, 90 IBU)
Kenjou, Humility in Japanese, is our core double NEIPA that is best enjoyed under a clear, starry night sky. The observable Universe as we know it is approximately 13.8 billion years old and 93 billion light years in diameter, consisting of trillions of galaxies (more stars than all of the grains of sand on Earth). The Milky Way galaxy alone contains hundreds of billions of stars. The universal elemental building blocks, including the rich foundation upon which biological life is built, are generated in stars and scattered throughout this unfathomably vast cosmos. We still struggle to define most of physical existence. Dark Energy. Dark Matter. A possible Multiverse. Under the crushing weight of The Unknown, Existential Humility is our foothold of sanity. We are not center stage. We are not alone. 人事を尽くして天命を待つ。Do your best, leave the rest to fate.
Kenjou pours an enticing, vivid orange. A sturdy double IPA malt backbone allows for a measured but massive dose of Pacific Northwest hops through the kettle hop and dry hop. A pleasantly dank, pungent juice bomb with a characteristic Amanogawa Vermont-inspired NEIPA resiny finish.
American Stout (ABV 8.6%, 50 IBU)
Honnou, Instinct in Japanese, is our base stout and State Fair Blue Ribbon winner! As the most advanced animals on Earth, innumerable scientific breakthroughs and deep-rooted layers of culture, philosophy and theology forged over thousands of years, have allowed us to create a safe, but fragile, plastic consumerist world. A defined life cycle. A snow globe existence, furthered by the advent of social media and digital convenience. However, to dictate our future, we must return to the undeniable truth in our basic instincts. We are not good. We are not evil. 俺たちは、生き残る為に必死な狼に過ぎない。We are but wolves, desperate to survive. Have the courage to choose your own path outside of what societal dogma has predetermined for you.
Honnou pours pitch black with a creamy head, full body and proper astringency. In this beer, we are seeking to get back to the soul of the stout. This is not a pastry stout. It is a complex, fine-tuned composition of pale, crystal and dark malts with a balanced addition of roasted barley. Be it cold weather or cold personal times, few beers warm you more than a pure stout.
Imperial Stout (Bourbon barrel-aged with maple and coffee)
Zetsumetsu, Extinction in Japanese, is our core Imperial Stout. Liquid Perspective. There have been 5 known mass extinction events in the history of the Earth, varying from catastrophic volcanic events to devastating meteor impacts. The most recent event 65 million years ago drove the dinosaurs to extinction, allowing mammals to ultimately thrive and evolve. However, we have now become victims of our very own evolutionary success. The population continues to explode. Mass interstellar travel is unattainable in the near future. Resources are dwindling. Waste is accumulating. Climate change is undeniable. Artificial Intelligence is accelerating. Wars are inevitable. Will the 6th mass extinction be a self-induced cataclysmic climate event? An AI-designed virus? The future is not our birthright. Unless we change our basic mode of operation and unify on difficult, sobering solutions, our fate is clear. 知らぬが仏。Ignorance is bliss.
Zetsumetsu pours pitch black with a creamy brown head, full body and immediate rich notes of bourbon-soaked maple and coffee as it hits the glass. The pinnacle of malted beverage indulgence, the Imperial Stout pushes the limits of flavor and alcohol content. Whether it is the ideal accompaniment to our own self-destruction, or Scientific Ascension, is up to us.
